D-11 Yeast cultivation

We have been brewing sake for two hundred years. Our in-house yeast laboratory selects all our yeasts, which are cultivated at each production site. Here at the Yasato Distillery, we cultivate the yeast that controls fermentation and the lactic acid bacteria that assist its movement.
