Distillation
Yeast fermentation increases the alcohol concentration in the mash to about 8%. The mash is then distilled using a copper pot still or a column still. The principle of distillation is to boil the mash, efficiently recovering the alcohol by utilizing the different boiling points of alcohol and water. This process greatly influences the flavor and lightness of the whisky.
