Milling
Malt containing enzymes produced during germination is dried, any roots are removed, and the malt is crushed in a mill. While a simple process, milling is one of the most important operations for whisky distilling. The outer husk of the malt plays an important role in filtration, so milling is performed in a way that does not destroy it, but crushes the starch inside as finely as possible to allow easy conversion into large amounts of sugar.
