Malting

After the starch-laden barley is harvested, it is allowed to gently slumber through the summer before sprouting with new life. Malting begins when summer ends. Several soakings in cold water and a week of moisture control at just the right temperature allow germination that builds up sufficient enzymatic power for wort brewing.
